Process
1. Disperse Gellan Gum in water while stirring. Heat to approx. 85 °C and keep temperature while stirring for 30 minutes.
2. Heat phase A and B separately to approx. 75 °C.
3. Add phase A to phase B with stirring.
4. Homogenize until uniform.
5. Add phase C and homogenize for a short time.
6. Cool down with gentle stirring and add phase D below 40 °C.
7. Cool down with stirring to approx. 30°C and adjust pH value to approx. 5.5 with phase E. |
